Green Sauce

 
This is a great sauce for fish-- it is really simple -- you just toss it all in a blender and have a vibrant side sauce to go with even plain grilled fish.  It makes it a complete flavourful dish with rice and salad. 
You can use all kinds of different fresh herbs, whatever you have on hand. The capers add a nice bit of salty savouriness and the lemon brings  out the potency of the herbs. What is most incredible is using fresh picked herbs-  if you have healthy herbs,  the combination comes out an electric green  from all the chlorophyll. While the zesty taste alone is enough to impress the colour is really remarkable.  
You can use any combination of herbs really, basil, thyme, tarragon and lovage all work well. 

Ingredients

1⁄2Cupparsely (fresh)
1⁄3Cupdill (fresh)
4Ouncegreen onions ((or a small shallot))
1Clovegarlic
3⁄4Cupolive oil
1Tablespooncapers (rinsed)
1 lemon (juiced)
 Dashsalt
 Dashpepper

Notes

  • Whiz all ingredients in a blender. 
  • Serve as a cold side sauce with fish. (ie do not cook sauce) 

 

  • Keeps for a few days in the fridge

NOTE: If you are going to prep this sauce well  of  serving, you can wait to add the lemon juice till later to preserve the bright green colour (it diminishes once it sits with lemon juice)
