TAMARIND SAUCE-- this is a tart and tangy, sweet and savoury sauce - see below for ideas!

Ingredients

1⁄2Cupvegetable stock (or water)
1⁄2Teaspoontamarind (concentrate)
1Teaspoonmiso
1⁄4Cupcoconut (toasted)
1Tablespoonginger (peeled, chopped)
1Tablespoongreen onion (chopped)
1Teaspoontamari (soy sauce or bragg's)
1⁄4Cupmaple syrup (or honey, or agave)

Instructions

 

 

  •     Toast the  coconut, peel ginger, chop up green onion 
  •     Whiz all  sauce ingredients in a  blender/food processor. 

use this sauce for lettuce wraps (see MIANG KHAM) , stir fries, on steamed broccoli or cauliflower
