This is a tart and tangy, sweet and savoury sauce – see below for ideas!


  • 1/2 Cup vegetable stock (or water)
  • 1/2 Teaspoon tamarind (concentrate)
  • 1 Teaspoon miso
  • 1/4 Cup coconut (toasted)
  • 1 Tablespoon ginger (peeled, chopped)
  • 1 Tablespoon green onion (chopped)
  • 1 Teaspoon tamari (soy sauce or bragg’s)
  • 1/4 Cup maple syrup (or honey, or agave)


  1. ?Toast the coconut, peel ginger, chop up green onion
  2. Whiz all sauce ingredients in a blender/food processor.
  3. Use this sauce for lettuce wraps (see MIANG KHAM) , stir fries, on steamed broccoli or cauliflower
